So I bought this rack of beef ribs for $5 last Summer and had it in the freezer in cryovac. I thawed it in the fridge this week, put some chipotle rub on it last night, and threw it on the smoker this morning. I cut the rack into 2 and 3 bone pieces in hopes of getting more smoke on more of the meat and having it cook faster. I am considering putting them in a pan with some chipotle beer to steam them after about 5 hours of smoking in hopes of breaking down the meat a little more. That is yet to be determined...

Those look good! I'll be curious to see how they turn out. I bought some bison ribs at the farmer's market last weekend and I've been trying to decide how to cook them.

4 hours into smoke at 225° and they were in the 180-190° IT range. Still need to cook a little longer.

Final product. Somewhere between 5 and 5.5 hours on smoker. I put some Heinz Texas Bold & Spicy on a few bones.

I don't think there is anything wrong with having an opinion, even more so when it's unpopular or can evoke strong emotions, but Mean seems like he ate a little too many Jeff Ott pills. For that reason, yes, what mean did was uncool. However, some of the rest of you who are painting him as the vilest of the vile are just as guilty of being dicks and taking shits on threads about things you don't like or have no interest in.
